I actually wrote this in 2019, but when I went looking at it this week I realized it needed a major overhaul. (Like Chocolopolis was mentioned like the store still exists. RIP Chocolopolis.)

I'm going to say as a heads up though: this post will likely feel needlessly detailed. When you're starting out there are just a lot of things you might not have considered before, like the impact of scent on your hands on tasting, so I'm covering as many things as I can. Got to set you up for chocolate tasting success after all! When you have more practice you'll get almost into a tasting flow, it's neat.

Food, child/forced labor in chocolate, long post, thread 

Since I'm seeing the forced/child labor in chocolate starting up again, we do thankfully have child and forced labor free chocolate! It's just not from a large mainstream brand.

The best we've got right now is through transparent and direct trade cacao, such as Meridian Cacao and Uncommon Cacao. (I know most folks are going to point to the slavery-free chocolate initiatives, but most of those brands are either bean to bar who buy through mainly those cooperatives, or Fair Trade, which is less stringent than direct/transparent trade.) It's not perfect, and the tradeoff is that bean to bar and craft chocolate is not cheap, but it's way, way better than Nestle's (alleged) behavior, especially since we're 20+ years past the signing of the Harkin-Engel protocol.

(Moka also has some of the cheapest bean to bar chocolate chips I've seen on the market! I need to do testing but I'm excited to try them. K'UL Chocolate is still the cheapest source I've found but not by much.)

Bean to bar chocolate has always been a luxury good, and I know I'm talking about stuff that's not remotely in the average budget. (I have my own thoughts on the cost of bean to bar chocolate, that's another discussion.) The problem is that bean to bar is also the part of the industry leading the way in exploiting cacao farmers less, and that matters. And Bar & Cocoa is still one of the most accessible ways to learn about bean to bar chocolate in the US. So yeah, I want to protect what I can here.

Also honestly I’ve been having a lot of thoughts about the future of Dessert Geek? When I started my YouTube channel my dream was to be a local travel vlogger, mainly highlighting Pacific Northwest desserts with some international travel as a treat (pun absolutely intended). I’ve moved mainly into bean to bar chocolate, but that was always meant to be *part* of my work, not all of it. Having my world shrink so much by being chronically ill in a pandemic has been tough, and I’ve been trying to figure out how to balance these goals.

(Yes, I know there are folks masking up and traveling just fine. I’m not physically up for that.)

Once I'm healthy-ish I want to take the time to evaluate alternatives to what I'm currently doing, as I lack the spoons to do those tests right now. Like I have some ideas for kinda hybrid recipe/education content, but I want to be in good enough shape first to make all these calls.

But yep, I’m alive, just very tired! I hope you’re all doing well!

Hi! A few people have been so kind and reached out, so I wanted to post an update here! Have a thread!

TL;DR: In the great words of Granny Weatherwax, I ate’nt dead, I’m just resting, will be back when I’m in better shape. And I'm kinda pondering what to do with Dessert Geek?

I’m still inactive because I’m still dealing with [pile of health stuff], it makes doing the research + video work I want to do really hard even compared to last year. (Like I’m actually sleeping now, but it’s poor quality sleep, which how.) So I’m resting and healing up as best I can, and it's just slow going. Like I'd actually hoped to be back weeks ago, and yet I'm still in recovery mode.

Thoughts on the closure of the Feed store, food 

So there's this online store, Feed, that I was both rooting for and not expecting to last the year, and it closed abruptly last week. And I'm conflicted on this.

On one hand, they definitely were focused too much on their app, an Instagram clone where you couldn't edit your profile (I had to email them to remove stuff). On the other, it kinda felt like they'd been forced by shareholders to make something app-based even though it wasn't needed?

Because the concept was legitimately great: a showcase of west coast small makers, shipped to your door, with small quantities available. They had some of the best mystery boxes I've ever had, and I got to try some brands I couldn't afford to otherwise since I could buy a single treat. And even the Instagram clone could have worked if it had been more a way for makers to post new products than them trying to build ~engagementTM~.

Feed had potential, and I do hope someone replaces them. Just... without the app.

I'm not gonna lie, I cry in budget whenever I make a Diaspora Co. order, and I also really wish this wasn't a coupon for first time buyers only. None of this is good. This money's not going to the farmers, it's going more likely to brokers, and we're likely going to have some level of global cacao shortages coming up.

So okay, what do?

- I know the world is a mess, but it's worth taking the time to be vocal at any big chocolate brands, and publicly if you can. Hershey and the like only take action when they're getting enough bad press, or they'll delay at all costs. (See the Harkin-Engel Protocol.)

- It's worth swapping to bean to bar chocolate if you can (I am always glad to talk recs!), but even jumping to Fair Trade does make a difference. (Though please keep asking for transparency from Fair Trade brands too!)

- Learn about all of this and spread the word! Even knowing bean to bar chocolate exists is still pretty new for folks, same to understanding what's going on in child labor in cacao.

Collective action has made a difference in chocolate before, and it can still make a difference now.

But there's one small thing here: mainstream chocolate has *always* been subsidized at the expense of the cacao farmers and the environment. Always.

Like okay, here's a chart from the 2022 Uncommon Cacao transparency report, showing their base price to farmers compared to farmgate, or what the big brands pay. (Source: uncommoncacao.com/pages/transp)

Looking at the weighted averages:
- Uncommon to farmers: $2.51/kilo
- Fair Trade total floor price: $2.40
- Farmgate (conventional) total price: $1.32

I need to find this article, but this has been so bad for farmers that families went into debt covering school uniforms. And it's also led to Ghana and Cote d'Ivoire being major sources of child labor *because* these farmers can't afford help otherwise (norc.org/research/projects/ass).

I'm still going to be pretty quiet on here coming up, but the cocoa commodities discussion is getting big and bad enough that I thought it was worth throwing my two cents on the issue. Have a thread!

So if you don't know what I'm talking about, over the last few months the base price of cacao beans has skyrocketed. It has already doubled from the beginning of this year (cnbc.com/2024/03/22/cocoa-pric), and it's still climbing. But okay, why?

Well basically the two main global sources of cacao, Ghana and Cote d'Ivoire, are in really bad shape thanks to droughts and other impacts of climate change (and this was honestly already predicted to be a risk years back climate.gov/news-features/clim), and so the big brokers have bought up as much cacao as they can. It's even impacting the bean to bar industry, just to a lesser extent (chocolatealchemy.com/blog/2024).

Food, mh-ish? 

I am exhausted and focusing on Side Project, but on the plus side, there will soon be macaroni and cheese.

And if you're thinking 'why *aren't* there more bean to bar candy bars?' I'd argue it's money and skills.

You have to charge 2-3 times as much for a Snickers or Twix at minimum for decent caramel and chocolate, and if your customer base is used to Snickers and Twix *prices* that can be way tough to sell. And you need to have confectioner skills and handling knowledge/training, which not every chocolate maker starts with since they don't overlap all that much with making chocolate. (There are rare chocolatier-to-maker brands like Fossa though, which usually offer more snacky treats.)

On the other hand, one of the best ways I've found to start folks towards more ethical chocolate is actually Alter Eco's version of Lindt truffles, and you can get those in a lot of nicer grocery stores. (And Fran's Imperiales are another jump from there!) So I wish more brands offered their own version of some kind of classic treat, it can make a huge difference, but I also get why they don't.

One of my ongoing frustrations in bean to bar chocolate has been the lack of classic candy bars. There are some wonderful bean to bar confections out there for sure and I love them, but sometimes you just want a Twix made with decent chocolate that you didn’t have to make yourself. (And sadly the best maker of bean to bar Twix dupes, Batch PDX, hasn’t sold them in years. Boo.)

Over the years though, my real challenge has been a decent Crunch bar dupe. A few brands have tried, but they were never fully right. Not enough rice, or not the right type of rice, or the chocolate was too tall or too sweet or too dark. So I kept looking.

But peeps! Peeps! Last night I found out that Marou released a 48% puffed rice bar for Easter. And it looks right: marouchocolate.com/products/mi

Annnd it’s only available as far as I can tell in Vietnam.

I can be patient. It will likely hit US shelves within the year. But I am so very grabby hands over this dang bar it is *unreal*
